For the last five years, sushi has been rising and rising – and then rising some more.
What was once a luxury cuisine is now an everyday meal, enjoyed the world over. And while growth is good, it brings its own set of challenges – chief among them food safety and product integrity. Excellence in these two areas is central to continued category growth and has never been more important. And that’s what we at the NFI Sushi Council are all about.
We bring together businesses from across the sushi supply chain – from fish farmers and harvesters, to processors and distributors, to retailers and foodservice – to champion industry ownership of safety standards and labeling practices. As a pre-competitive stakeholder group we are the global voice for the sushi industry, enhancing sushi product integrity and promoting industry-led food safety.
Making sure sushi and sashimi products are properly transported, received, handled and prepared.
Working to guarantee the proper menuing of species and the standardization of product labeling.
Promoting sushi and its consumption as far, as wide and as innovatively as possible.
Whether you’re farming or harvesting, processing, distributing or serving up sushi products to customers, you can find all the guidance and resources you need here to keep sushi SAFE, STRAIGHT and MOVING.
