What is the Sushi Council?

The Sushi Council is a pre-competitive stakeholder group of sushi supply chain organizations, under the National Fisheries Institute, the leading U.S. seafood trade association. Learn more about NFI here.

What are the Sushi Council’s aims?

We are committed to enabling all supply chain actors – from fish farmers and harvesters to retail outlets and foodservice establishments – to produce, distribute and sell sushi responsibly. We work together to build consumer trust and enthusiasm for sushi products through creating consistent food safety standards and labeling integrity.

When was the Sushi Council formed?

Founded in 2024, the Sushi Council formed around a collection of supply chain stakeholders for the creation and endorsement of high product sourcing standards. Council representatives regularly speak at seafood events such as the Global Seafood Market Conference and the Seafood Expo North America. The Council also organizes steering committees between industry and technical personnel to write, edit, and publish food safety sushi guidance on an ongoing basis.

How do we join the Sushi Council?

The Sushi Council welcomes any company that produces, processes, imports, prepares, sells or markets sushi products.

When does the Sushi Council meet?

The Sushi Council meets every January at the Global Seafood Market Conference and every March at the Seafood Expo North America. The council also holds regular virtual meetings throughout the year.
